Mornings and me get along well when I get enough sleep and I eat a great breakfast. If one of these two things do not happen, I am about as happy as a cat in a swimming pool. Not a pretty picture.
So when I came across the craze of overnight oats, I launched myself headfirst onto the healthy bandwagon and it’s done wonders for my mornings. Breakfast is as easy as this: open fridge, take out oats, sit down, get spoon, open mouth, put spoonful of oats in mouth… Child’s play!
Oats are great because they are a low GI food; this means they release their carbs over an extended period of time, and this does not spike your insulin levels. They are also a great source of fibre so your gut stays in top form. And if you thought they couldn’t get any better, they also sneak in 14g of protein per 100g.
I team them with chia seeds because chia seeds are a SUPERFOOD (see my previous post “Superfood Salad” for more info on chia seeds). The chia seeds, when soaked, bind and thicken the mixture for easy eating (by the way, chia seed parfait is an excellent dessert option if you’re out of ideas). Adding fresh fruit and raw nuts to your breakfast gives a wonderful boost of flavour, colour, and essential vitamins and minerals. Just look at these delicious things! Figs are so vibrant and tasty, nectarines are succulent, and raspberries are tangy and tantalizing. Need I say more?
Overnight Oats
Ingredients
- ½ cup of oats, uncooked
- 1 ¼ cup of coconut milk
- 2 Tblsp chia seeds
Method
- Combine all ingredients in an airtight container or bowl.
- Refrigerate for 3 hours or overnight.
- In the morning, remove from the fridge and add your favourite toppings.
Notes
- This can be made with yogurt if you’re not vegan or don’t have coconut milk on hand
- You can use a half coconut milk, half coconut water mix if you find coconut milk too rich
- Add a tablespoon of peanut butter to the mix for a nutty flavour and extra protein
- Add fresh fruit or your choice of sweetener
